Mango Lassi

With summer almost upon us, the thought of preparing something to eat in the heat and humidity all seems like too much hard work. When hunger strikes in these conditions, the perfect solution is a big refreshing drink that not only quenches the thirst but also satisfies the appetite.

Lassi is a traditional chilled drink from India, and is often served alongside curries to refresh the palate. It is normally made with yoghurt, although sometimes buttermilk is used instead. Some recipes call for the addition of milk, but I prefer to leave it out giving a thicker result. Mango is by far the most popular Lassi flavour in Australia, but other fruits such as strawberry and melon work well too.

My favourite time to enjoy this drink is at breakfast time or as a midday pick-up. It really is a meal in a glass.

Ingredients (serves 2):
2 ripe mangoes, peeled and roughly chopped
1 1/2 cups natural yoghurt
1 cup ice cubes
1 teaspoon ground cardamom
1 tablespoon honey

Method:
1. Place all ingredients in a blender and blend until smooth.
2. Serve in chilled glasses.
