Indonesian Stir-Fried Green Beans in Coconut

We here at Noosa Foodie love to cook by the seasons, and Green Beans are plentiful and of excellent quality right now. This dish, which features on the menu in our Indonesian Banquet Cooking Class, is a delicious and nutritious way to prepare them and can be enjoyed either as a side dish or a vegetable based main dish. Serve with steamed jasmine rice.

Ingredients (serves 4-6):
2 tablespoons peanut or coconut oil
1 onion, thinly sliced
3 cloves garlic, crushed
2 teaspoons freshly grated ginger
2 teaspoons sambal oelek
½ teaspoon terasi (shrimp paste), crumbled
½ teaspoon turmeric powder
500g green beans, trimmed and cut in half
¾ cup coconut cream

Method:
1. Heat the oil in a wok over a medium heat, then add the onion and stir-fry for 3 minutes or until softened.
2. Add the garlic, ginger, sambal oelek, terasi and turmeric powder and cook for a further 1 minute.
3. Add the beans and stir fry for 3 minutes.
4. Add the coconut cream and bring to the boil, stirring continually.
5. Season with salt and serve.
