Brownie Balls

I’ve just returned from a week at Eden Health Retreat in the beautiful Currumbin Valley. Apart from the pristine environment, plethora of activities and fantastic facilities, one of the highlights was the food.  There was no going hungry in this health retreat as we were spoilt with breakfast, morning tea, lunch, afternoon tea and dinner each day – all nourishing and balanced, lovingly prepared and definitely delicious. Creating nutritious food that tastes amazing is one of my favourite challenges, and with this in mind this week I share with you my recipe for Brownie Balls. If you are endeavouring to clean up your diet and fill your body with healthy foods, these scrumptious little morsels will hit the spot if you have a chocolate craving.

1½ cups raw walnut halves
¼ cup raw cacao powder
1 teaspoon vanilla extract
¼ teaspoon sea salt
1 cup soft dates (about 10 Medjool dates), pitted and roughly chopped
1 tablespoon water
Desiccated coconut to coat

1. In a food processor, process the walnuts into a fine meal. Add in the rest of the ingredients, and process again until a sticky, uniform dough is formed.
2. Roll into balls and coat in coconut and place in the fridge to set.
3. Store in a sealed contained in the refrigerator for up to 2 weeks. Can also be frozen.
