These addictive sweet, spicy, salty nuts will go down a treat this Festive Season. They were a big hit in our Christmas Cooking Class last weekend, and as well as being a cinch to prepare they make a wonderful gift. Use a selection of nuts – almonds, walnuts, cashews, pecans, macadamias, etc – just make sure they are not already roasted. The recipe can easily be doubled or tripled, and the nuts will keep fresh for a week stored in an airtight container.
Ingredients:
30g butter
1 tablespoon honey
1 teaspoon smoked paprika
1 teaspoon sea salt
350g mixed unsalted nuts
Method:
1. Preheat oven to 170°C. Line a baking tray with baking paper.
2. Melt the butter and honey in a medium saucepan over a medium heat.
3. Stir through the paprika and salt, then add the nuts and stir until all the nuts are coated.
4. Place the nuts in a single layer on the baking tray and bake for 20 minutes or until they are golden, turning halfway through cooking time.
5. Cool completely before storing in an airtight container.
