Strawberry Ice Cream

One of the many advantages of living in the Noosa region is the availability of incredible strawberries much of the year round. They are abundant right now, and when life gives you strawberries we say make strawberry ice cream!

Who doesn’t love ice cream, and with a recipe this easy why go for store bought when you can make your own? Don’t panic if you don’t have an ice cream maker – we give you an alternative method which will give you an equally delicious result.

500g strawberries, hulled and halved if large
150g caster sugar
2 teaspoons fresh lime juice
Pinch salt
1½ cups cream
½ cup milk

1. Place the strawberries, sugar, lime juice and salt in a blender or food processor and process for 1 minute or until the sugar is dissolved and the mixture is pureed.
2. Add the cream and milk and process until fully combined.
3. Pour the mixture into an ice cream maker and churn, following the manufacturer’s instructions. Transfer to a container and place in the freezer for about 2 hours or until frozen.
4. If you don’t have an ice cream maker, place the mixture in a shallow container and freeze for 2 hours or until almost set, then beat and return to the container. Repeat 2-3 times.
