This time 4 years ago I was walking the Camino de Santiago, an 800km walk across Northern Spain. It was a life-changing travel experience and recommended for anyone with a reasonable degree of fitness and a sense of adventure. During my Camino, I ate my way across Spain as well as walked, and being an inquisitive foodie ensured I tasted as many different foods as possible! As a result, life’s a feast‘s “A Taste of Spain” cooking class was created, and showcases a selection of authentic Spanish fare. This dish from our cooking class features prominently on many Tapas menus and is delicious as well as easy to make.

Ingredients (serves 4-6 or 8-10 as part of a tapas selection):
500g button mushrooms, cleaned
1/3 cup extra virgin olive oil
½ cup sherry vinegar
4 cloves garlic, finely sliced
2 bay leaves
5 sprigs fresh thyme
1 teaspoon mustard seeds
Sea salt and freshly ground black pepper to taste

Method:
1. Combine all the ingredients in a large bowl. Cover and marinate in the refrigerator for at least 4 hours, up to 2 days, stirring occasionally.
2. Transfer to a serving dish and serve.
