Grain-Free Granola

Try your hand at making your own granola with my simple grain-free / gluten-free recipe.  Flavoured with tahini, honey, allspice and vanilla, my recipe is super-delicious: after making this, you will never buy commercial granola again!

Ingredients:
2 cups raw mixed nuts (cashews, walnuts, pecans, Brazil nuts, almonds, etc)
¼ cup tahini
¼ cup raw honey
1 teaspoon vanilla extract
2 teaspoon allspice
½ teaspoon sea salt
½ cup shredded coconut

Method:
1. Preheat the oven to 150°C and line a large baking tray with baking paper.
2. Roughly chop the nuts.
3. Warm the tahini and honey in a medium saucepan over a medium-low heat until it just starts to simmer. Remove from the heat and stir through the vanilla, allspice and sea salt.
4. Add the nuts and coconut to the tahini mixture and stir until evenly coated.
5. Spread onto the prepared baking tray and cook for 35-40 minutes or until golden, turning once or twice to ensure even cooking.
6. When it is cool enough to handle, crumble into granola pieces.
7. Cool then store in an airtight container and use within two weeks.
